It felt like eating guilty food but it was healthy. (Obviously not vegan or vegetarian). I subbed olive oil for the butter. I did dust the chicken with flour but I banged each piece to remove the excess. It took less than 1/8 cup of flour.
My big modification was adding a ton of steamed veggies. I also put a smidge of cayenne. Have a great week. Chopping meals for three meals is making it easier to work full time, do my chores and take three classes this semester.
